A commercial coffee brewer intended for a restaurant or a coffee shop should have two separate brewing stations so you can provide both regular and decaf coffee or even two different types of coffee, depending on what your customers want. Contrary to popular belief, you do not need extra heat plates on top. Some commercial coffee brewers have these so you can leave the coffee on heat to keep it warm. However, leaving the coffee on heat more than a few minutes after it has finished brewing will make it bitter. Invest in a couple of thermos flasks in stead. Make sure your commercial coffee brewer is sufficiently big to make enough coffee to last for approximately 45 minutes in your busiest periods. You won't need bigger than that, as the coffee loses its quality when kept longer than an hour. On a final note; make sure all parts are easy to clean and preferably machine washable. A dirty coffee brewer will adversely affect the quality of the coffee.
